
Gluten-Free and Dairy-Free Sweet Potato Pancake Recipe
Today is National Pancake Day! This is my favorite day to make my amazing Gluten-Free and Dairy-Free Sweet Potato Pancake! This recipe does not require many ingredients and tastes so good and easy to make. For some reason, I tend to have a few left-over sweet potato in my refrigerator each month and I’m always trying to find something to make with them. Sweet Potato Pancakes is an easy way to use up your remaining sweet potatoes and also a healthy alternative for pancakes.
Gluten-Free and Dairy-Free Sweet Potato Pancakes
1 small sweet potato (1/2 cup mashed)
2 eggs
1/4 cup of gluten-free flour (I used oat flour)
1/2 teaspoon of baking powder
1/4 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
1/2 teaspoon of vanilla extract
a pinch of salt
oil or butter for cooking
maple syrup or agave nectar for serving
